Haut-Bailly grapes are hand-harvested, processed, and fermented for up to ten days in stainless steel and concrete vats. After maceration, the wines are aged for eighteen months in oak barrels. The 2015 vintage is a seductive Haut-Bailly with refined black cherry and redcurrant fruit, a silky texture, and a seductive nose. It is a deep, complex Claret with a mature, mature character, and pairs well with red meats and poultry.
